Muffin Wednesday: Eggnog

What to do with leftover eggnog? Muffin Wednesday, of course! My book didn't have a recipe, so I turned to the Internet, settling on this one from BHG.com.

2 1/4 c flour
1 c sugar
2 t baking powder
1/2 t ground nutmeg
2 eggs, lightly beaten
1 c eggnog
1/2 c butter, melted
1 t vanilla
1/2 t rum extract

Nutmeg-Streusel Topping

1/3 c flour
1/3 c sugar
1/2 t ground nutmeg
2 T butter


1. Preheat oven to 375 degrees. Grease or line muffin tins.

2. In a small bowl, combine dry topping ingredients. Using a pastry blender (or your fingers), cut in the butter until the mixture resembles coarse crumbs.

3. In another bowl, combine flour, sugar, baking powder and nutmeg. Make a well in center and set aside.

4. In a third bowl, combine eggs, eggnog, melted butter, vanilla and rum extract. Add the egg mixture all at once to the flour mixture. Stir just until moistened. Spoon batter into prepared muffin cups, filling each two-thirds full. Sprinkle with topping.

5. Bake for 18 to 20 minutes or until golden and a wooden toothpick inserted in center comes out clean.

WOW! These came together quickly and easily with ingredients I already had on hand and were very good. We ate them hot from the oven. Definitely make these! Thanks to Skyler who took a break from short stories to lend a hand.

  1. You have no idea how excited I am about making these!!!!! I LOVE egg nog, so I never have any leftover :) I've had two cartons already this season! mmmm

  2. YAY! I hope you love them as much as we did. But keep in mind, the original recipe says they are 312 calories each - so don't eat the whole batch by yourself ;)
