Holiday sopes

Before winter break, CE2 celebrated with a special holiday lunch of sopes, popcorn cake and tres leches cake.

Popcorn cake is Skyler's family tradition, and she wanted to share with us. She brought in all the ingredients and equipment, and I assisted in the CE2 kitchen. They were kinda like giant popcorn balls but made with marshmallows. YUM!
One had a layer of M&Ms and the other was mixed with spiced gum drops.
We attempted popcorn balls with the leftovers:
Israel, Erick and Hilda helped prepare our main dish: sopes! Sue cooked the chicken, and we bought the sopes and salsa from Sanchez Taqueria in Tigard. When it was time to eat, our guest chefs demonstrated proper construction technique:

We topped off the meal with this amazing tres leches cake, also from Sanchez Taqueria:
