Muffin Wednesday: Orange

Today's experiment was the orange variation on Plain Muffins. My week has been crazy hectic, and this was quick, easy and used ingredients I already had in the CE2 kitchen - no planning needed.


Preheat oven to 400 degrees and grease muffin pans.

2 c flour
3 t baking powder
1/4 c sugar
1/2 t salt
1 T orange zest
1 c orange juice
1 egg, beaten
1/4 c vegetable oil
1/2 t vanilla

1. In a large bowl, combine flour, baking powder, sugar, salt and zest. Make a well in the center.

2. In a smaller bowl, combine orange juice, egg, oil and vanilla.

3. Add liquid to dry ingredients all at once, stirring just until combined.

4. Spoon the batter into the prepared muffin tin, filling about three-quarters full. Bake for 20-25 minutes or until golden brown.

These did come together quick and easy, but they weren't super good. They weren't bad, just nothing special.

We thought they needed butter or honey or something to spruce them up.
