Bean and potato nachos


Doesn't that look amazing? That's what I thought when I saw it yesterday on Oh She Glows, a really cool vegan blog that I follow.

I made the Bean and Potato Nachos for dinner last night, and it was very tasty!

I made just a couple slight changes to her recipe: I used pinto beans because that's what I had in the freezer. And I coated the potato wedges in canola oil because that's what I had on hand.

We topped our nachos with green onion, tomatoes, cilantro, Mexican crema and crushed chips. I think Brad added some Tapatio for heat.

Super simple, super affordable, super fast (other than waiting for the potatoes to roast) and super yummy!
