Muffin Monday: Carrot Cake Muffin Bars

It's the last day of the semester, and I decided to change things up with this awesome recipe from Eat, Live, Run: Carrot Cake Muffin Bars. 3/4 c flour
3/4 c packed brown sugar

1 stick butter

1 egg
1/2 t cinnamon (she suggested 1 t but I don't like a heavy cinnamon flavor)

1/2 t salt

1 t baking powder
1 c oats

1 c grated carrot
1/4 c milk

1/2 c roughly chopped walnuts

Preheat the oven to 350.

In a large bowl, combine the flour, baking powder, cinnamon, salt and oats. Set aside.

Cream together the butter and brown sugar until light and fluffy. Add the egg and beat again until smooth. With mixer on low, slowly stream in the milk. Add to the dry ingredients, grated carrots and walnuts and mix until just combined.

Spread the batter into a greased 9x9 pan and bake for 25-30 minutes or until golden.

Let cool completely before cutting into squares.

I doubled this recipe and baked it in a 9x13 so they cooked closer to 40 minutes and were a bit thicker than Jenna's turned out. Nothing tricky about this recipe - nice and simple. One of my biggest life problems is impatience... and the baking part of my world is no different. I couldn't wait until they cooled, so they were extremely crumbly. BUT... I sliced them up and put them out for the CE2 staff and students and then ate all the crumbs from the pan... all of them. Nice self control.

Andy declared them "amazing" and Israel also sang their praises. I think this is a definite keeper. Plus, the oats, carrots and walnuts must offset the butter, right??
