Andy: Oui oui, monsieur. From the Wisconsin region, a nice, firm cheddar. Also from the great state of Wisconsin, an aged Parmesan. Here you will find a cheddar-style spread, which has reacted nicely with the air to form a light rind, which I think you'll find both challenging and delicious. At that point, I would recommend you take a quick trip south of the border to the great state of Illinois, where you will find this fine blue cheese dressing. If I may be so bold, it's a lot of fun to let the goldfish take a little swim in the blue cheese. Bon appetit.

No-TV Tuesday
OK... so I started a new thing. I know it seems like a cliched New Year's resolution, but it's really not. I just need things to have labels and organization and plans. I need to have something named that I can work on. I have these ideas all the time - this one just happened to come around New Years. So for now I'm going to try No-TV Tuesdays. I like the challenge of having something to focus on - a little goal for myself. Instead of spending my Tuesday evenings channel surfing (there's no good TV on Tuesdays anyway!), I plan to do other things... maybe a puzzle... or read a book... or work on a project... or play in the garden... or try a new recipe. The possibilities are endless.
And I will blog about it. That way I can't cheat. I must do something.
Tonight I went to dinner with my bestie, Kendra. She had a burrito and I had fish tacos at Manzanillo in Sherwood. I totally forgot to take a picture until my leftovers were already boxed up:
I asked for whole beans, and I'm pretty sure the menu said they come on flour tortillas (which is definitely my preference), but these were still very tasty. I would get them again :)
Kendra and I had a nice dinner, catching up on our Christmas/New Year's vacations and family stuff.
I came home with bags of groceries and picked up the remote to entertain myself while I put away everything. Then I remembered. No TV for me :)
At least my first week was a success!
Holiday sopes
Before winter break, CE2 celebrated with a special holiday lunch of sopes, popcorn cake and tres leches cake.
Popcorn cake is Skyler's family tradition, and she wanted to share with us. She brought in all the ingredients and equipment, and I assisted in the CE2 kitchen. They were kinda like giant popcorn balls but made with marshmallows. YUM!

One had a layer of M&Ms and the other was mixed with spiced gum drops.



We attempted popcorn balls with the leftovers:
Israel, Erick and Hilda helped prepare our main dish: sopes! Sue cooked the chicken, and we bought the sopes and salsa from Sanchez Taqueria in Tigard. When it was time to eat, our guest chefs demonstrated proper construction technique:


SOOOO GOOD!



We topped off the meal with this amazing tres leches cake, also from Sanchez Taqueria:

King's Mountain (1/1/11)
Brad's climbing buddy, James, wanted to celebrate the gorgeous weather with a New Year's Day hike. I encouraged Brad to join the fun while I stayed home and rested. After all, I'd already run a 5K on New Year's Day. But my enthusiastic hubby insisted that I go along, too.
We met James and Doug (another climber friend) at 10 a.m. at the Tanasbourne Target and carpooled to the King's Mountain trail head on Highway 6 in the Coast Range.
We took it nice and easy, climbing steadily up the 2,780 feet/2.7 miles. The trail was snow covered (and a little ice) most of the way, with deep snow at the summit. But it was dry, so not too slippery.
The weather was near perfect: clear and almost no wind, even at the top. It was near freezing, and the sun was warm. The summit provided a magnificent view of the Coast Range while we ate our lunch.

We made it up and down in a couple hours, going at a leisurely pace. I'm so glad Brad talked me into getting off my butt and spending the day on the trail :)

Old Maid Flats (12/31/10)
With the amazing snow and clear weather, we HAD to get in one more cross-country ski trip before the end of the year. The plan had been to visit the Barlow Road area, but because the snow level was so low, we decided to go to try out Old Maid Flats off Lolo Pass Road.
We pulled in an immediately saw my cousins Roger and Cathy... small world! (Why didn't I take a picture??)
It was our first time at Old Maid Flats, so we headed out toward the Ramona Falls trail head.

Brad brought along all the new filters he got for Christmas:


About 2.5 miles later, we arrived at the trail head (a popular summer hiking spot) and were rewarded with a beautiful view of the mountain:



It was all slightly uphill on the way out... so downhill the whole way back. We cruised to the car in short order and went home for our little New Year's Eve party with the fam. And because we stayed so low on the mountain, skier traffic, predicted to be horrendous because of the holiday, was nonexistent! Bonus!
Brad had wanted to ski Old Maid Flats for a while, but the snow level doesn't always cooperate. We found it to be a pleasant area, but a bit boring. There were no fun hills to ski down, just a flat, wide road. Next time we'll look for the harder trails in the area.

Looking ahead
I don't really believe in resolutions. But I do think the turning of the calendar provides a good time to reflect on the past and think about the future. Here are a few of my "goals" for 2011:
* Train for and run the Disneyland Half Marathon
* Heal and move on from broken relationships
* Focus on healthy relationships
* Get outside more
* Spend more quality time with my husband
* Finish reading the Old Testament
* Read more books
* Focus on the great things in my life, less on the disappointments
* Laugh more
I hope you look back on 2010 with few regrets and look forward to 2011 with anticipation of greatness. I will try to do the same. Happy New Year! :)

Midnight 5K
For our January race, we were going to do Portland's First Run at midnight on New Year's Day. But we decided to save our $30 per person and just have our own get together and first run of the year at home.
So we ate some yummy burritos and played games while we waited for the ball to drop. Then we put on our warm running clothes (it was about 30 degrees when we left) and some glow sticks and went for our 5K. I had some leftover bibs to add to make the event official.

We preselected a course that was just about 3.2 from door to door. Considering the burrito sitting heavily in my tummy, the cold air and the late (or early?) hour, I'm happy with my speed.
I wore my new ID :)
All done :)
