For last week's Thursday gathering I looked for a cookie recipe that didn't include chocolate (for Brad and friend Michael). I decided to make the traditional oatmeal cookies right from the Quaker Oats box - with some modifications. Not thinking they were blog-worthy, I didn't take any photos. But everyone loved them and wanted the recipe, so here goes (as I made them):
1/2 pound butter (2 sticks)
1 c packed brown sugar
1/2 c granulated sugar
2 eggs
1 t vanilla
1 1/2 c flour
1 t baking soda
1/2 t salt
3 c oats
1 c (ish) chopped pecans
1 c (ish) dried cranberries
1. Heat oven to 350
2. Beat butter and sugars until creamy. Add eggs and vanilla.
3. Add flour, baking soda and salt to bowl. Mix well. Stir in oats, nuts and cranberries.
4. Use small cookie scoop to drop dough onto ungreased cookie sheet.
5. Bake 8 minutes until starting to brown. (box says 10-12, but I used very small scoop and always under bake - that's the key).
6. Cool slightly then transfer to wire rack. Enjoy!
