OK - these get a big thumbs-up: Peanut Butter Chocolate Chip muffins!
I was thinking about peanut butter and chocolate (I do that a lot!) and did a quick Internet search. I found this recipe on Annie's Eats and thought it was worth a try. The gamble paid off :)
Preheat oven to 375 degrees and line muffin pans with paper cups.
2 1/4 c flour
2 t baking powder
1/2 t salt
2/3 c brown sugar
6 T butter, melted and cooled
1/2 c peanut butter
2 eggs
1 c milk
3/4 c chocolate chips
In a medium bowl, whisk together the flour, baking powder, salt and brown sugar. Set asisde.
In a large bowl, whisk together the melted butter, peanut butter, eggs and milk until smooth. Add in the flour mixture and stir just until combined. Stir in chocolate chips.
Divide batter evenly between the prepared muffin tins and bake 17-20 minutes or until a toothpick inserted in the center comes out clean.
Cool 5 minutes in the pan before cooling completely on a wire rack.

I doubled this recipe, making almost three dozen. It was quick and easy, and the ingredients were all common pantry items - always a bonus for me. The batter was very good (too good... I ate more than I should have!), and the muffins were great.
We ate them warm (we can never wait very long around here) and loved them. One student said it was like eating a giant peanut butter cookie - YUM!!!
