Kendra made amazing pumpkin muffins at our Garden Party potluck, and I knew I had to get that recipe and make them for Muffin Wednesday! Turns out the recipe originated with another Garden Party friend, Korie. Thanks to both of you :)
1 1/2 c flour 1 t baking powder
1 c canned pumpkin
1/3 c vegetable oil
2 eggs
1 t pumpkin-pie spice
1 1/4 c + 1 T sugar
1/2 t baking soda
1/2 t salt
1 t cinnamon
Preheat oven to 350 degrees. Line muffin tin with paper cups.
Combine flour and baking powder. In a separate bowl, whisk together pumpkin, oil, eggs, pie spice, 1 1/4 c sugar, baking soda and salt until smooth. Add flour mixture until just combined.
Stir together cinnamon and remaining 1 T sugar in a small bowl.
Divide batter among muffin cups, then sprinkle with cinnamon-sugar. Bake until puffed and golden brown, about 20-25 minutes.

I love these! I'm not usually a pumpkin fan, but this is subtle and yummy. Tastes (and smells!) like fall.
Josepha, Myanna and Ashley helped me double the recipe and create these yummy treats for the class. We spread out the duties so everyone got involved in the mixing, scooping and sprinkling. Overheard in CE2:
