Muffin Wednesday: Banana Plus

Muffin Wednesday was delayed this week due to a lack of butter in the CE2 fridge (oops). But never fear, Muffin Friday is here!!

Skyler filled the cups:

Preheat oven to 350 degrees

1 c sugar
1/2 c butter
1 egg
3 mashed bananas
1/2 t salt
1 T milk or orange juice (we used milk)
1 1/2 t baking powder
1/2 t baking soda
2 c flour
1/2 c chocolate chips

1. In a bowl, cream sugar, butter and egg. Add bananas, salt, milk, baking powder, baking soda, flour and chips. Stir well.

2. Spoon batter into prepared muffin tin. Bake for 20-30 minutes, turning pans after 10 minutes.

Apparently, this recipe is a keeper ;) Skyler and Matt helped me whip these up in just a couple minutes. It was quick and used very simple, standard baking ingredients. I had several student and staff testers this week and all seemed to agree that we should make this one again!
