Muffin Wednesday: Eggnog

I made these amazing eggnog muffins last year and decided it would be the perfect treat for the Muffin Wednesday before winter break.

My in-laws gave me this sweet
cupcake stand, which I've been saving just for today. YIPPEE!
2 1/4 c flour
1 c sugar
2 t baking powder
1/2 t ground nutmeg
2 eggs, lightly beaten
1 c eggnog
1/2 c butter, melted
1 t vanilla
1/2 t rum extract

Nutmeg-Streusel Topping

1/3 c flour
1/3 c sugar
1/2 t ground nutmeg
2 T butter

1. Preheat oven to 375 degrees. Grease or line muffin tins. (I used the matching plaid liners that came with my tree stand!)

2. In a small bowl, combine dry topping ingredients. Using a pastry blender (or your fingers), cut in the butter until the mixture resembles coarse crumbs.

3. In another bowl, combine flour, sugar, baking powder and nutmeg. Make a well in center and set aside.

4. In a third bowl, combine eggs, eggnog, melted butter, vanilla and rum extract. Add the egg mixture all at once to the flour mixture. Stir just until moistened. Spoon batter into prepared muffin cups, filling each two-thirds full. Sprinkle with topping.

5. Bake for 18 to 20 minutes or until golden and a wooden toothpick inserted in center comes out clean.
