It's Muffin Wednesday!!
Angela and I whipped up Chocolate Cheesecake Muffins for our CE2 friends. She's a pro.
Preheat oven to 375 degrees and grease muffin tin.
Filling:
1 package cream cheese (3 oz), softened
2 T sugar
Muffins:
1 c flour
1/2 c sugar
3 T unsweetened cocoa
2 t baking powder
1/2 t salt
1 egg, beaten
3/4 c milk
1/3 c oil
1. In a small bowl, combine cream cheese and the 2T filling sugar. Beat until light and fluffy.
2. In a large bowl, combine flour, remaining sugar, cocoa, baking powder and salt. Make a well in the center.
3. In another bowl, combine egg, milk and oil. Pour into dry mixture and stir just until moist.
4. Spoon batter into prepared muffin tin, filling cups half full. Add 1 t cream cheese filling and top with remaining batter.
5. Bake for 15-20 minutes.

I liked these a lot. They weren't very sweet but had a wonderfully yummy surprise inside.
Everyone else loved them except Israel... but I think cream cheese is a new flavor for him.
