Because it's a short week for parent-teacher conferences, we won't have students in on Wednesday. So I made these Chocolate Chipit Snackin' Muffins Tuesday for our brand-new (CE)2 kiddos who started this week.
It's always fun to bake for the newbies who are thrilled to be in a class where they get to eat yummy treats!
1 1/2 c flour
1 c sugar
2 T cocoa
1 t baking powder
1 t baking soda
1/2 t salt
1/4 c oil
1 t vanilla
1 T vinegar
1 c warm water
1/2 c chocolate chips
Preheat oven to 400 degrees and line muffin tin with paper baking cups.
1. In a bowl, combine flour, sugar, cocoa, baking powder, baking soda and salt.
2. Make a well in the center and add oil, vanilla, vinegar and warm water. Stir just until moist. Add chocolate chips.
3. Spoon batter into prepared muffin tin, distributing evenly. Bake 15-20 minutes in preheated oven.

I think we have a winner, although I'm pretty sure this is just a chocolate cupcake. (What's really the difference, anyway??)
"Wow!" Andy muttered under his breath while taking his first bites.
"I love it," Leilani proclaimed.
The consensus is that they were really good - very chocolaty. And because of the choco chips inside and the light texture, they were extra gooey inside.
Because it's almost St. Patrick's Day, they had green sprinkles. And because it's snowy again, they also had snowmen papers :)
